  • Vegetable Paella

Ingredients

  • 1 red pepper, chopped.
  • 2 teaspoons smoked paprika.
  • 1 garlic clove, finely chopped.
  • 1 chopped onion.
  • 150g runner beans
  • 300g short-grain rice.
  • 1 teaspoon dried chili flakes.
  • 1 tablespoon oil.
  • 400g of chopped tomatoes.
  • 1 vegetable stock cube.
  • 1 lemon, juiced.
  • 210g tin chickpeas, drained.
  • A handful parsley, roughly chopped.

Method

  1. Heat one tablespoon of oil in a frying pan and cook the garlic and onion for about five minutes. Cook it until it softens.
  2. Stir the rice, paprika, and the chili flakes for about a minute. Then add the tomato. Let it boil and simmer for about ten to twelve minutes as you occasionally stir.
  3. Add the beans, chickpeas, and pepper. Let it cook for another ten minutes, then squeeze the lemon juice over it.
  4. Serve with extra lemon if you like.

 

  • Vegan Mac and Cheese

Ingredients

  • 1/4teaspoon of onion powder
  • 1/2cup of water and more for soaking
  • 1peeled carrot (medium-size), roasted or steamed
  • 1/4cup of yeast or cheese style shreds
  • 1teaspoon of white (or apple cider) vinegar
  • 1/8teaspoon of ground nutmeg
  • 1/2cup raw cashews or macadamias
  • 1teaspoon of salt
  • 3servings of pasta of choice or you can put the sauce over veggies or use it as a dipping sauce.

Method

  1. Cover the nuts in a bowl with water. Soak for about three to six hours and then drain it.
  2. Mix all the ingredients and blend them until they are smooth. Transfer this mixture to a pot and heat it to your satisfaction.
  3. Taste it and add extra seasonings to it as necessary.
  4. Serve and enjoy!
  • Vegan Brownies

Ingredients

  • 1 cup of white flour.
  • 1 cup unsweetened cacao
  • 1 cup and 2 tablespoons of milk of choice.
  • 1/2 cup and 3 tablespoons of oil.
  • 1/2 teaspoon of baking powder.
  • 1/2 cup brown sugar.
  • 1/4 teaspoon and 1/8 teaspoon of salt.
  • 1 tablespoon of pure vanilla extract.

 

Method

  1. Preheat the oven to about 350 degrees.
  2. Mix the flour, cocoa, baking powder, salt, and sugar. Stir them together. Add water, vanilla, and vegetable oil. Mix to blend and spread it evenly in a baking pan.
  3. Bake for about 30 to 40 minutes in the pre-heated oven until the top loses its shiny appearance. Cool it for some time.
  4. Cut into pieces to serve.
